Introduction

Applications are invited from suitably qualified personnel to fill in the position of Food and Beverage Supervisor .The successful candidate will be based at Rainbow Towers Hotel.

The position reports to the Food and Beverage Manager.

PRINCIPAL RESPONSIBILITIES:            

  • Conducts bars daily stocktakes and interprets the results so as to manage shortages/surpluses in the bars and ensures all stock take results are distributed to management.
  • Spot-checks fridges and freezers in kitchens, F&B outlets and stores to ensure that stocks are being accounted for properly.
  • Conducts F&B float and cash spot checks at random and submits reports to management.
  • Checks daily and monthly F&B revenue reports for accuracy of covers, revenue average spent per cover.
  • Computes operating expenses on a weekly basis and compares with budgets and advises management accordingly.
  • Controls F&B beverage outlets in terms of wastage, pilferage and efficiency.
  • Ensure stock takes are conducted to determine daily and month to date cost of sales.
  • Establishes menu & beverage prices based on costing information collected and analyses pricing cycles and patterns in the industry and aligns business unit pricing models accordingly. Updates selling prices, menu prices, consumption and POS systems.
  • Takes part in menu engineering in liaison with the chef and ensures all menu items have a recipe card.
  • Analyses all purchases done from time to time and queries & investigates any anomalies.
  • Ensures all invoices being brought for processing from stores have all necessary supporting documents.
  • Produces production cost of sales flash reports.
  • Checks and verifies package meals, voids, corrections, any staff discounts, and complimentary sales.
  • Checks and ensures no materials are issued from stores without a requisition or approval from the respective department head.
  • Studies weaknesses in F&B control and provides suggestions for improvement.

PERSON SPECIFICATION

  • Degree in Accounting Honours Degree or equivalent.
  • 2 years’ experience in a hotel, busy city property or Fast Moving Consumer Goods (FMCG) entity
  • Working knowledge and experience of OPERA, ACCPAC, Cost, Inventory, Micros POS and materials control systems.
  • Superior analytical and investigative skills.
  • Must have a high level of attention to detail.
  • Should be an assertive person of unquestionable integrity.
  • Good verbal and written communication skills.
