Introduction
Applications are invited from suitably qualified personnel to fill in the position of Food and Beverage Controller and the successful candidate will be based at The Rainbow Towers Hotel.
The position reports to the Finance Manager.
PRINCIPAL RESPONSIBILITIES
- Cost Management – Conduct detailed Cost of Sales analysis and maintain standard recipe costing for all menu items.
- Menu Engineering – Partner with the Executive Chef to analyse menu performance to optimize profitability.
- Inventory Control – Oversee the monthly stock-take process, ensuring the security of all storerooms and cellars while managing slow-moving stock.
- Procurement Oversight – Validate supplier pricing and approve purchase orders to ensure alignment with monthly budgets and quality specifications.
- Operational Auditing – Monitor POS systems for unauthorized voids or discounts and conduct periodic spot checks and yield tests.
- Financial Reporting – Prepare comprehensive monthly F&B reports, variance analyses, stocks reports and forecasts for senior management.
PERSON SPECIFICATION
- A degree in Accounting, Finance, or Hospitality Management.
- 2-3 years’ experience in a busy city property or FMCG
- Working knowledge of OPERA, ACCPAC, Micros POS and materials control systems
- Superior analytical and investigative skills.
- Should be an assertive person of unquestionable integrity.
- Strong communication skills to effectively interface between departments.
